Mango Chutney





2 tsp coriander

1 tsp chopped fresh ginger

1 tsp salt

1 clove garlic

1 tsp mustard seeds

1/2 cup vinegar

1 cup brown sugar

1 red chilli

1 onion

8 mangos, chopped

1 tbsp oil

1 tbsp curry

1/2 cup raisins




Heat the oil in a large saucepan over medium heat. Add the onion, ginger, garlic and mustard seeds and cook, stirring, until softened, 2 to 3 minutes.

Add the chopped mangos, sugar, raisins, red chilli, coriander, vinegar and salt. Simmer, stirring, until the liquid is slightly thickened, 8 to 10 minutes. Let cool. Refrigerate up to 2 weeks.
